Summer Greek Salad

The sweetness of organic, local tomatoes mixed with crisp cucumbers make this simple lettuce-free salad a refreshing side dish.

Summer Greek Salad

Ingredients:

4oz Feta Cheese

3-4 Sweet Frying Peppers, sliced

2-3 Cucumbers, chopped

1 pint Grape or Cherry Tomatoes, cut in half or

3-4 Slicing or Heirloom Tomatoes, chopped

3-4 Small Red Onions, chopped

1 tsp Dried Oregano

2 tbsp Red Wine Vinegar

1 tbsp Olive Oil

Dash of Cayenne and Paprika

Salt to taste

Method:

Add all ingredients except the feta. Toss. Crumble feta on top and serve.
