Blackberry Heart Cupcakes with Champagne Frosting

Cupcakes

Ingredients:

Cupcakes topped with blueberries and dried lavender.

3 fresh eggs

1 stick unsalted butter (at room temperature)

3/4 cup demerea sugar

1 1/2 cup whole wheat pastry flour

1 tsp baking powder

1/2 tsp salt

2 tbsp vanilla extract

1/3 cup blackberry juice

12 large blackberries

12 cupcake liners

Method:

Preheat oven to 350°F.

Combine flour, baking powder, and salt in a medium bowl. In a separate bowl, lightly mix the eggs and blackberry juice.

In a separate large bowl, cream butter, sugar, and vanilla for 5 minutes with an electric mixer (about 10-15 minutes with a manual mixer or whisk). Add the flour mixture a little at a time, alternating with the egg mixture. Mix well. Consistency should be like cake batter.

*The batter’s moisture will depend largely on the freshness of the flour. If the batter is dry, add almond milk or cow’s milk a teaspoon at a time until the batter is smooth.

Pour batter into cupcake liners until 3/4 full. Drop one blackberry into the center of each cupcake, and press it in lightly so the blackberry is embedded in the batter but still near the top of the cupcake.

Bake for 12-18 minutes or until an inserted toothpick comes out clean. Remove from pan and let cool.

Frosting

Ingredients:

2 1/2- 3 cups powdered sugar

1/4 cup champagne

1 stick unsalted butter (at room temperature)

Optional garnishes:

Whipped Champagne Frosting

blueberries

blackberries

dried lavender flowers

Method:

Mix 2 1/2 cups powdered sugar with the butter. Slowly mix in the champagne. Add more powdered sugar for thickness, as desired.

Once the cupcakes have cooled, spread frosting and add garnishes. Enjoy!

Alternate Frosting: Blackberry Creamcheese

Ingredients:

8 oz cream cheese

3 tbsp pureed blackberries

3 cups powdered sugar

Method:

Mix all ingredients in a medium bowl with a whisk. Add to cupcakes when they’ve cooled.

  • Whole Wheat Pastry Flour (bulk)
  • Organic cream cheese
  • Dried lavender flowers (bulk herbs)
  • Sea Salt (bulk)
  • Local eggs
  • Organic oils
  • Pure vanilla extract

*Absent a local option, we used an organic champagne from Trader Joe’s. We are on the lookout for a local winery that offers sparkling wine.
