Baked Salmon or Tofu in Blackberry BBQ Sauce

Sauce

Ingredients:

2 cups fresh or frozen (thawed) blackberries

Blackberry BBQ Sauce

1/3 cup ketchup

1/2 cup honey

1/3 cup ginger (peeled and minced or grated)

2 tbsp balsamic vinegar

1 jalapeno (seeded and minced)

1 clove garlic (minced)

dash cayenne pepper

Method:

Add all ingredients to food processor or blender, and process or blend until smooth. Add to a medium saucepan and simmer on med-low for 20-30 minutes, stirring occasionally.

This sauce can be used for both a marinade and a dipping sauce. We used it to marinate salmon and tofu, and the next day, we used it as a dipping sauce for roasted veggies. It would also work as a yummy marinade for poultry or pork, if that’s your thing.

Salmon or Tofu

Ingredients:

1 lb of locally caught salmon or tofu

Baked Salmon with Blackberry BBQ sauce

1 cup blackberry BBQ sauce

1 tsp grapeseed, olive, or canola oil

Method:

Cut salmon in half or tofu in fourths . Marinate  in 1/4 cup of blackberry sauce in the refrigerator for about two hours.

Preheat oven to 375°F.

Place salmon or tofu in a lightly oiled ceramic baking dish. Bake for around 20 minutes, or until salmon is flaky and moist. For the tofu, bake until hot.

These can be served over a rice, quinoa, or amaranth pilaf or by themselves.
